Heidi Park is a Korean-American who graduated from the US Coast Guard Academy in 2000 with a degree in Management and served 5 years as an active duty officer in the US Coast Guard. Her desire to make pastries led her to the Culinary Institute of America in Hyde Park, NY where she developed skills in making chocolates, cakes, candies, viennoiserie, and breads. In 2007, she graduated with an Associate degree in Baking and Pastry Arts and then was fortunate enough to learn in the NYC kitchens of Cafe Gray, P*ong Dessert Bar, and at the bakery of L’Atelier de Joel Robuchon of the Four Seasons Hotel. In 2008, she moved to Tallinn for her Estonian sweetheart. Today she runs Kondiiter.ee cakery with a team of 8 permanent bakers.
