Matcha Cake


Matcha, also known as green tea powder is used for Japanese and Korean tea ceremonies. We use it to flavor the alternating layers of ultra-light castella sponge and whipped cream . The green coloring is natural!  It is an airy and moist cake that is not too sweet.  When kiwi fruit is in season, we add it to the cake for a sour and tangy balance.  This cake was developed especially for Tokumaru restaurant in Tallinn where you can purchase it by slice.

Ingredients: flour, sugar, corn starch, egg, rapeseed oil, matcha, heavy cream 35%, powdered sugar, kiwi
